Ingredients
100g roast chicken (left over from Sunday)
1tbsp reduced-fat mayonnaise
1tsp curry paste
Large wholemeal pitta bread
Handful of shredded lettuce
1 tomato diced
Sugar-free soft drink
Banana
Dice the chicken and mix with the mayonnaise and curry paste. Open a pitta bread, stuff with mixed salad and the chicken mixture. Open mouth, eat. Simple as that.
Why should I have it?
This lunch provides oodles of potassium, magnesium and folate. Potassium is important in helping to prevent high blood pressure and folate helps reduce high levels of homocysteine in the blood, which increases the risk of heart disease. Magnesium keeps your muscles working properly.
Remember to remove the skin from the chicken – this lowers the fat content, and besides, once chicken has been in the fridge for a few hours the skin is as wrinkly as an old lady in a bath.
